Mexican Paleo Superfood Bowl



When we first started cooking together in the first couple of years of our marriage, Cara had a few food sensitivities, so we tried to eat healthy and cut out some foods that we thought might be causing allergic reactions. The only problem was that we didn’t really know how to do that… it seemed like there was no middle ground between binge eating deep-fried stuffed-crust taco pizza or only eating celery once a day. We struggled a lot with finding balance in those early years! We tried going full vegan, low-carb, no meat, no wheat and many others. It helped us learn how to use flavors and seasonings, but I (Gianni) just felt like I was always hungry.


At some point we discovered the Paleolithic diet, also known as the paleo or caveman diet. It seemed like the best of both worlds. A diet that let’s you eat bacon; could it be true??? Thus began our foray into paleo-based meal-planning!


These days, Cara no longer has problems with food sensitivities, but we still try to eat healthy and we’ll eat a mix of vegan, paleo and/or just standard American meat-and-cheese meals. One of our go-to paleo recipes are these Mexican Paleo Superfood Bowls!


We treat these Mexican paleo superfood bowls like tapas: there’s a little it of everything on the plate. There’s sweet, salty, savory and a little bit of spicy all within this one dish… and we are ALL about that kind of variety! The creamy texture of the fresh avocado pairs so well with all the dense foods on the plate. And the runny egg yolk gives the dish a really nice liquid-to-solid ratio. And honestly the sauce on the chicken really sells this dish. Ketchup, honey and taco seasoning… who knew those three would pair so well together! But they do.
